Healthy Pancakes!

Ingredients

  • 80g of blitzed oats
  • 3 large eggs (fresh farm eggs are the best) *note if making for one person still use 2 eggs*
  • 3 tbsp of sweetener
  • 8 heaped tbsp of 0% fat free greek yog (the thicker the better)
  • 1 heaped tsp of baking powder
  • 2 tsp of vanilla essence
  • frylight
  • topping of your choice

Start by blitzing your oats in a food processor until they are a flour like consistency. Add in the remaining ingredients to your blender and process to as smooth a mixture as you can get.

Heat your frying pan on a medium heat and spray well with frylight.

Once your pan is hot, use a ladle to pour in your mixture to the size of your desired pancake, i love mine fat fluffy!

When they start to bubble and the edges begin lifting, around 45 seconds (this can depend on the size of your pancake), quickly flip and cook the other side. Re-spray your pan with frylight and repeat process until you have used all your mixture.

If cooking a few I pop them on a plate in the oven on the lowest setting so they don’t get cold.

Create your stack, add your favourite toppings and there you go! Enjoy.

P.S Playing ‘send me on my way’ the Matilda pancake song and having a little dance in the kitchen makes everything a little better whilst making these.
